"Using the Plate-by-Plate Approach® in the Treatment of Eating Disorders"

There are several methods currently being used for nutritional rehabilitation in eating disorder treatment. In today’s session, we discuss the pros/cons of these methods and how the Plate-by-Plate Approach® is different. The Plate-by-Plate Approach uses only a plate as its backbone and does not require counting calories, measuring, or using exchanges. This approach is designed to treat all eating disorders, across all types of cultural cuisines and aids in weight restoration (if necessary), metabolic recovery, resumption of menses, and reversal of medical complications. It can be used seamlessly in conjunction with FBT as long as caregivers are collaborative and non-prescriptive. We will also discuss how this approach can be used at the PHP, IOP and inpatient levels of care, and how this approach can help clients rebuild a healthy relationship with food.

Creatively Working with Eating Disorders

This presentation will touch on the history of art therapy, supporting research, its benefits and uses with eating disorders, and hands-on interventions. Being an artist is not needed and even individuals who believe they are artistically incompetent can still use and benefit from art therapy.
Recommended Materials:

- Colored pencils, crayons, or markers
Learning Objectives:
1) Introduce attendees to art therapy and it’s uses and benefits
2) To show the benefits of art therapy when working with eating disorders

She worked at a partial residential, A Center For Eating Disorders, in Birmingham, AL, while doing her internship in art therapy. She moved back to Florida and switched to private practice and started working at Gilstrap & Associates where she did her counseling internship and then continued to work after she graduated in 2017.

The culinary environment in our society is a diverse, changing landscape. Individuals with eating disorders and their families are presenting to treatment with an increasing number of dietary limitations. Popular dieting belief, food trends, nutritional science, cultural and spiritual heritage all must be considered when assisting any individual to make adaptions to eating patterns, but have more significance for the eating disorders population. This workshop will provide insight into some of the common dietary restrictions and limitations that individuals with eating disorders and their support systems identify at the initiation of care discussing how to assess and manage this delicate and important aspect of treatment. Participants will receive guidance on how to script conversations regarding change in support of a healthy nutritional state and eating disorder recovery.
Learning Objectives:
At the conclusion of this presentation participants will be able to:
1. Identify at least 3 dietary limitations patients coming to eating disorders treatment may request
2. Understand the current method to assess a patient for food allergy
3. List at least 2 approached for challenging a patient/family regarding a dietary restriction
Presenter:
Leah Graves is the Vice President of Nutrition Services and Culinary Services for Veritas Collaborative and has been treating patients with eating disorders for over 30 years. Prior to joining Veritas, Leah was the Manager of Eating Disorders Nutrition Therapy for the Laureate Eating Disorders Program in Tulsa, OK. She graduated with highest distinction form the University of Oklahoma Health Sciences Center in 1985 then began her work with individuals with eating disorders.
Leah is a founding member of the Academy for Eating Disorders where she has served on the Academy’s Executive Team, Board of Directors and Chaired the North American Teaching Days for the International Conference on Eating Disorders in addition to serving the Academy on the Nominating, Fellowship Selection, and Membership Recruitment and Retention Committees. She has also been honored with the distinction of Fellow of the Academy for Eating Disorders.
Leah has been involved in eating disorders advocacy with the National Eating Disorders Association as a member of the Conference Planning Committee and with the Oklahoma Eating Disorders Association where she served as President and Governance Committee Chair. She currently serves on the Clinical Advisory Board for Rock Recovery.
Leah has been invited faculty at many eating disorders conferences including the International Conference on Eating Disorders, Hispano-Latin American Congress on Eating Disorders, International Association of Eating Disorders Professionals Symposium, Renfrew Foundation Conference, Multi-service Eating Disorders Association Conference and the Academy of Nutrition and Dietetics Food and Nutrition Conference as well as numerous regional and local conferences. Leah has written several publications pertaining to nutrition and eating disorders and is highly respected within the eating disorders field for her expertise in medical nutrition therapy, nutrition counseling, clinical supervision, and research.

We the People: The Practice & Ethics of Eating Disorders Advocacy
In this presentation, participants will learn how clinicians, individuals in recovery, and loved ones join forces to help influence public awareness and public policy as it relates to early-intervention, access to care, and treatment of eating disorders. Participants will learn a history of advocacy in the field of eating disorders, the ethical imperative for advocacy by clinical providers, and forward-looking pathways to engagement, including:
· Connecting with local, regional, and national coalitions mission to increase public awareness of eating disorders illnesses
· Participating in state and federal lobbying efforts by writing to and meeting with legislators, policy makers, and federal agencies, with the intent to educate public officials on the severity of eating disorders illness, the impoverished research environment, and the importance of increased treatment and early-intervention resources
· Collaborating with other clinicians and the recovery community to use personal experience as fuel for fundamental grassroots change.
Learning Objectives:
1) Identify the legislation that acknowledged eating disorders for the first time in federal law
2) Note two or more fields of clinical practice wherein which providers are ethically bound to participate in legislative/governmental advocacy and
3) Describe two or more ways to be involved in current advocacy efforts.

Johanna Kandel is the founder and CEO of The Alliance for Eating Disorders Awareness and the author of Life Beyond Your Eating Disorder (Harlequin). She founded The Alliance after a 10 year battle with various eating disorders. Since founding The Alliance in October 2000, Johanna has brought information and awareness about eating disorders to more than 400,000 individuals nationally and internationally. In addition, she facilitates weekly support groups, mentors individuals with eating disorders and their families through their treatment and recovery, and helps thousands of people to gain information and find the help they need. As a passionate advocate for mental health and eating disorders legislation, Johanna has spent a lot of time meeting with numerous members of Congress, and was part of the first-ever Eating Disorder Roundtable at the White House.
Johanna is a proud member of the Board of Directors for the Eating Disorders Coalition, member of the Academy for Eating Disorders Advisory Board, and a member of the Eating Disorders Leadership Summit. Chase is a prominent figure in the architecture of mental health, recognized for his commitment to clinical excellence in the treatment of eating disorders and advancement of meaningful healthcare policy through advocacy and strategic engagement. He has offered expert guidance to the Food & Drug Administration, the National Institute of Mental Health, the White House, the U.S. Department of Health and Human Services’ Office of Women’s Health and has provided testimony to the U.S. Department of Labor on access to care. Bannister founded and served as the Chief Strategy & Clinical Integrity Officer of Veritas Collaborative, a specialty healthcare system for the treatment of eating disorders. He has held roles as Clinical Director and founding clinician of Carolina House, a residential treatment center for eating disorders. Bannister completed his clinical training at Duke University’s Counseling & Psychological Services and Duke University Medical Center Infectious Disease Clinic. Bannister holds a Master of Social Work from the University of North Carolina at Chapel Hill, a Master of Divinity from Duke University, and is a Phi Beta Kappa graduate of Wofford College, where he earned a Bachelor of Arts in English Language & Literature. Fat and Starved: How Weight Stigma Conceals Atypical Anorexia
Using both personal and clinical perspectives, this presentation will offer a glimpse into struggling with atypical anorexia in a higher weight body. It will also examine the use of metabolic testing and body composition analysis to diagnose and treat eating disorders in higher weight people. Presenters will also emphasize the importance of the eating disorders community pioneering efforts to confront weight stigma within our own field as well as in more general healthcare settings.
Learning Objectives:
At the conclusion of this presentation, participants will be able to:
1. Identify three ways in which assumptions about health, based on weight, can delay diagnosis and hinder treatment success and recovery for higher weight individuals with atypical anorexia.
2. Recognize three health concerns that can be assessed through metabolic testing and body composition that cannon be assessed by measuring one's weight or calculating Body Mass Index.
3. Acknowledge one way the eating disorders community can confront weight stigma within the field, and one way the community can challenge weight-based health assumptions in a broader context.

Joslyn P. Smith is Director of Public Policy and Community Relations for the National Eating Disorders Association (NEDA), where she is responsible for overseeing NEDA's federal policy initiatives and state and federal anti-weight discrimination policy initiatives, and facilitating relationship building between NEDA and other relevant national health, mental health, and social justice organizations. Prior to its merger with NEDA, Joslyn was Director of Policy and Government Affairs for the Binge Eating Disorder Association. She has also served as Senior Legislative Assistant for the American Psychological Association's Public Interest Government Relations Office in Washington, DC where she led federal policy efforts addressing eating disorders and obesity prevention by bringing a Health At Every Size perspective to policy discussions. For almost two decades, Joslyn has been an outspoken advocate in the eating disorders and Health At Every Size fields, presenting about and advocating for a reevaluation of misconceptions related to health and weight.
Carolyn Hodges Chaffee, MSRDN, CEDRD, founder and owner of the Upstate New York Eating Disorder Service, opened the Nutrition Clinic, one of the first eating disorder clinics in upstate New York, over two decades ago. Recognizing the need for more intensive treatment and regional step-down programs, she also opened the Sol Stone Center, a partial hospitalization program, and intensive outpatient programs in Syracuse, Ithaca, and Binghamton. The Upstate New York Eating Disorder Service now serves more than 400 patients a year. She has also been part of Cornell University’s Healthy Eating Program since its inception. Carolyn also co-authored the 2015 book Measuring Health from the Inside (Friesen Press).

Treatment Priorities for Gender Diverse Clients with Eating Disorders

Presenter: Vaughn Darst (he/they) is a transgender nonbinary Registered Dietitian who specializes in treating eating disorders among under-served populations, including gender diverse teens and adults, high weight individuals, and neurodivergent youth. Vaughn received his MS in Nutrition from the USC, and his BA in Critical Theory and Cultural Studies, with a concentration in Transgender Studies, from Scripps College. Vaughn treats adolescents and adults with disordered eating at Center for Discovery and Children’s Hospital Los Angeles. He seeks to work collaboratively with clients to establish a nourishing relationship to food and their body. Vaughn is also a public speaker and educator, and his TEDx Talk, “In a World That is Wrong About Us,” addresses the unique concerns of clients for whom disordered eating manifests at the intersection of gender, fatness, food, and identity. Vaughn’s instragram @allgendernutrition centers the transgender community’s need for affirmative nutrition support and advocacy.
Summary of Presentation: Transgender and Gender Diverse clients face unique challenges in accessing eating disorder treatment, body peace, and long term recovery. Most treatment providers report a need for more training about the needs of this population, but limited resources exist and providers with expertise in gender affirmative care are generally unfamiliar with eating disorder treatment interventions. This session aims to increase provider understanding of cisgender privilege in order to increase capacity for cultural humility, as well as explore the nuanced challenges facing these clients in their recovery. Session will include case studies and exploration of the impact of transphobia, weight stigma, and western colonization on the formation of transgender body image standards.
Learning Objectives:
1) Participants will be able to identify three examples of cisgender privilege and explain how an articulation of privilege can enhance provider capacity for cultural humility.
2) Participants will be able to identify two prevalent barriers to treatment for gender diverse clients with eating disorders.
3) Participants will be able to identify common experiences of gender dysphoria that may arise in the context of eating disorder recovery and/or weight stabilization.
